Sardines and Tomatoes on Toast

This could be rather challenging for young children to manage, so here is what you can do for them. Cut the toast into fingers, place a sardine on each finger. Serve the tomato slices on the side. As for the fresh dill. I have heard comments like “ugh..I’ve got grass on my toast”. How you deal with this is up to you of course, but I do encourage children to eat fresh herbs. Perhaps you might want to start them with a sprig of dill over the slices of tomatoes and try one yourself in front of them.

Serves 4

Ingredients

  • 4×105g can sardines, drained well
  • 4 tomatoes sliced
  • 2 tablespoons chopped fresh dill
  • 8 slices mixed grain bread, toasted
  • lemon wedges
  • sea salt and pepper

Method

  1. Place slices of tomato on toast, sprinkle with sea salt.
  2. Place sardines on tomatoes, sprinkle with pepper, dill and squeeze of lemon juice.
