Mixed Berries in Blackcurrant Jelly

If you like a stronger blackcurrant flavour, use more fruit juice and less boiling water.

Pumpkin Pudding with Nutmeg and Walnuts

When my mother cooks pumpkin, pieces come out the same shape as when they went in and they are always cooked to perfection. When I do it they look a mess. So I decided to make some changes to the recipe to suit my capabilities.

Chocolate Polenta Cake with Choc Chips

You just can’t have a recipe book without chocolate recipes. As it happens, chocolate can be good for you, in moderation of course.

Ricotta Cheese Cake

This is as guilt free as it gets, but it is best to make it when you are entertaining so that you don’t get tempted to pick on the left overs.

Stewed Apricots with Honey Yoghurt and Almonds

These apricots are delicious on cereals or on their own as a snack.

Bread Pudding

Although the ingredients are fairly harmless, this pudding is quite filling. So, I suggest you serve it after a light meal.

Apple and Blackberry Crumble

If by chance you have some left over (never happens in our house), you can keep it covered, in the fridge for up to 3 days. Also wonderful for breakfast.

Garlic Prawns

Prawns

These prawns could be Mediterranean or Asian by changing the greens you serve with them.

Great Northern Beans with Rice

Beans

This was my father’s favourite dish, so it was cooked quite often in our house. The best thing about these beans is that they are wonderful hot or cold.

My father’s favourite version was the hot one with rice where as my mother and I preferred the cold version with a squeeze of lemon juice on top.

Veal Shanks

This is my version of ‘Osso Bucco’. The authentic version is a little too fiddly for me and it involves a fair bit of frying, which I try to avoid when ever it is possible.

Mediterranean Fish Soup

Soup

Don’t be put off by the two cooking stages. This is an extremely easy yet finger-licking good soup (more like a stew really).

Braised Beef with Mushrooms, Red wine and Herbs

Mushrooms

It is always a good idea not to add all the liquids at once to braised meat dishes. That way meat gets a chance to cook in its own juice and the flavours diffuse much better.

Penne with Tuna, Olives and Capers

Keep the left overs, they are excellent in lunch boxes. I don’t recommend cheese with this pasta.

Try this Chilli Con Carne with oven baked corn chips on the side rather than on a bed of rice.
